Hi Chelsea! Brown rice usually requires more cooking time and a different liquid ratio, so I could just cook it according to package instructions (you can cook it in chicken broth for more flavor)! Then proceed with the recipe as outlined, using steamed broccoli for the casserole.

I have several favorite recipes online but I very rarely leave a review. This chicken broccoli and cheese casserole might just be the most perfect recipe I’ve had in the many years I’ve been on this Earth. The additional spices are a must have. The casserole is creamy, flavourful, crunchy and oh so comforting!!!! 3rd time making it and my family loves it every time 😉

This is one of my new favorites!!! I followed the recipe exactly, using rotisserie chicken, with the exception of the thyme and garlic powder. I did add a little extra cheese though, because…..cheese. This made a huge batch that tastes just as good the next day. I will most definitely make this again – thank you for sharing!

This just went to the top of our favorites list!  I enjoyed making it, and I enjoyed eating it even more. It’s perfect as-is, but I am thinking about occasionally including some slivered water chestnuts or sautéed mushrooms in the rice mixture, or maybe slivered toasted almonds on top, just for variety. Thanks for yet another superbly satisfying recipe!
